At Nomadia, traditional cuisine is not just a word on a sign. It is a daily commitment. Every morning, our Var suppliers deliver French meats, Mediterranean-caught fish and seasonal vegetables. Our kitchen operates on short supply chains: products travel the fewest kilometres possible between producer and your plate.
The lamb shank that simmers for seven hours in our oven, the brioche buns kneaded daily for our burgers, the hand-cut and on-site fried chips: nothing arrives pre-prepared or frozen in our kitchen. This standard demands time and expertise, but you taste it in every bite.
Located on the Route du Plan de la Tour in Sainte-Maxime, our restaurant benefits from the proximity of hinterland Var producers. French-farmed meats, Var olive oil, vegetables grown just kilometres away: this Provençal terroir is present in each of our specialties.

Lamb shank: 7 hours of patience
Low-temperature cooking for seven hours transforms this cut into an exceptional dish. The collagen melts slowly, the meat becomes so tender it falls apart without a knife. The cooking juices naturally reduce into an intense, aromatic sauce. This patience is what makes the difference between a decent dish and a specialty you remember.
Artisan burger: zero compromise
A good burger starts with good bread. Ours is kneaded and baked daily in our kitchen. The meat is French beef, minced on site to preserve all its flavour. The cheddar is aged, not industrial. The fries are hand-cut and fried once at high temperature for perfect crunch. Every element is designed to deliver a burger unlike anything you find elsewhere.
Fish of the day: the Mediterranean on your plate
Our fish arrives from Var ports and Mediterranean shores. Sea bass, sea bream, red mullet, pandora: the choice depends on the morning catch. The fish is prepared simply, grilled or baked in parchment, to respect the product quality. A drizzle of Var olive oil, seasonal vegetables: Mediterranean cuisine at its most authentic.
Homemade desserts and treats
Nomadia's specialties do not stop at the main course. Our desserts are also prepared on site: chocolate fondant, bourbon vanilla crème brûlée, seasonal fruit tart. Each dessert is designed to extend the culinary experience with the same standards of freshness and taste as our mains.

Each specialty deserves a wine to match. Our wine list favours Var and Provence appellations: côtes-de-provence, bandol, coteaux-varois. Nomadia restaurant is located at 252 Route du Plan de la Tour in Sainte-Maxime, Var. With 110 seats between our dining room and terrace, we welcome both couples and large parties. Free parking in front of the restaurant makes access easy, including for takeaway orders.
